White Bean Bruschetta

4 tablespoons of extra virgin olive oil
2 tablespoons of balsamic vinegar
1/2 teaspoon of hot red pepper flakes, optional
1/2 teaspoon chopped fresh rosemary
2 tablespoons of basil leaves, cut into narrow strips
1 garlic clove, peeled and thinly sliced
2 tablespoons of black olive paste, optional
2 cups of cooked cannelloni beans or canned cannelloni beans, drained and rinsed
sliced Italian bread, grilled or toasted
salt and pepper
Mix oil, vinegar, pepper flakes (I've never used them), rosemary, basil, garlic and olive paste (I've never used it), in a large bowl. Add beans and stir gently. Refrigerate for 2 hours to enhance flavors. When ready to serve, taste mixture and add salt and pepper as necessary.
I usually slice a long loaf of Italian or French bread and toast in oven and then spoon the mixture on top, right before serving.
