Baked Goat Cheese Dip

Get a container of soft goat cheese (whipped, like cream cheese) and a large red bell pepper. Pre-heat oven to 350.  Then, in a medium size bowl, mix the goat cheese with about 1 1/2 tablespoons of hot sauce, 2 tsps. of fresh coarsely chopped Cilantro, a pinch of garlic powder, a tsp of fresh ground black pepper.  Next, cut the top of the pepper off and dice the pepper meat around the stem and mix that in as well.  Stuff the mixture into the pepper and put in a pie pan, standing upright.  Then cover it with foil and bake for 15 minutes. Then remove the foil and sprinkle the top with paprika for color and bake for another 10 minutes. Remove from oven, place on a plate sprinkled with fresh cilantro and serve hot with bagel crisps, wheat thins, thin triscuits or whatever cracker you desire
