- 1 lb. frozen spinach, thawed and squeezed dry
- 5 eggs
- ½ large onion, finely chopped
- 10 Tbls. margarine or butter, melted
- 2 cloves garlic, chopped
- 1/8 tsp Cheyenne pepper
- 1 ¾ c. Italian-style bread crumbs
- 1 tsp. salt
- 1 c. shredded parmesan cheese
- Preheat oven to 350 degrees
- Combine all ingredients in a large bowl and combine well.
- Form 1 inch balls and place closely on a non-greased baking sheet.
- Bake for 20-25 mins. or until slightly golden.
*These can be made ahead of time and frozen for up to 2 weeks. Just heat them in a 350 degree oven.
