Spinach Parmesan Balls

  • 1 lb. frozen spinach, thawed and squeezed dry
  • 5 eggs
  • ½ large onion, finely chopped
  • 10 Tbls. margarine or butter, melted
  • 2 cloves garlic, chopped
  • 1/8 tsp Cheyenne pepper
  • 1 ¾ c. Italian-style bread crumbs
  • 1 tsp. salt
  • 1 c. shredded parmesan cheese

  1. Preheat oven to 350 degrees
  2. Combine all ingredients in a large bowl and combine well.
  3. Form 1 inch balls and place closely on a non-greased baking sheet.
  4. Bake for 20-25 mins. or until slightly golden.

*These can be made ahead of time and frozen for up to 2 weeks. Just heat them in a 350 degree oven.
