1 can of chicken broth
1 cup dried orzo pasta
1/3 cup water
2 ½ cups of chopped fresh veggies of your choice (I like to use broccoli, carrots, green onions, and red peppers)
1/3 cup grated Parmesan cheese
Combine pasta and broth in medium pan. Stir in water. Bring to a boil. Reduce heat and simmer, cover for 7 minutes. Add veggies and mix well. Simmer for another 5 minutes. Remove from heat and stir in cheese.
You can use a frozen veggie mix instead of fresh veggies too.
