Cranberry Bread

1 orange
2 tablespoons butter (plus more to grease pan)
1 egg
1 cup of sugar
1 cup chopped cranberries (I buy them fresh and whole and then use the food
processor to chop. In a pinch, "off season" when I couldn't find fresh
cranberries, I've used dried cranberries and they worked well too.)
1/2 cup chopped walnuts
2 cups of flour
1/2 teaspoon salt
1/2 teaspoon baking soda


Grate the rind of 1 orange.

Squeeze the juice and add enough boiling water to make 3/4 cup of liquid.

Add the grated rind and two tablespoons of butter to the liquid. Stir to
melt the butter.

In another bowl, combine 1 egg and 1 cup of sugar. Beat well and stir in the
orange mixture.

Then add, 1 cup of chopped cranberries and 1/2 cup of chopped walnuts.

Sift together 2 cups of flour, 1/2 teaspoon of salt and 1/2 teaspoon of
baking soda. Add this to the first mixture and combine.

Spoon batter into a buttered 9 x 5 loaf pan.

Bake 1 hour at 325 degrees.

* Instead of bread, I have also used the mixture to make muffins.
