Baked Apples

6 medium baking apples (I like Granny Smith)
1 cup apple or orange juice
1/4 cup firmly packed brown sugar
1/2 tsp. ground cinnamon
1/3 - 2/3 cup raisins

PREHEAT oven to 350°F.
Remove the core of the apples, leaving the bottom 1/2 in intact. Pierce the skins with a sharp knife or fork. Place apples in shallow baking dish.
COMBINE juice, sugar and cinnamon; pour over apples. Fill the center of the apples with raisins.
BAKE 30 to 35 min. or until apples are tender, basting occasionally with the juice mixture. Remove apples from oven. Let stand 1 min before serving.

Tip: Line bottom of oven with foil in case the juice from the apples splatter during baking.



Alternative Microwave Method

The apples aren’t as crisp when the come out, but they cook much quicker.

1/3 - 2/3 cup raisins

Remove the core of the apples, leaving the bottom 1/2 in intact. Pierce the skins with a sharp knife or fork. Place apples in shallow baking dish.

COMBINE juice, sugar and cinnamon; pour over apples. Fill the center of the apples with raisins.

Cook on high for 5-10 minutes or until apples are tender, basting occasionally with the juice mixture. Check occasionally to make sure they don’t soften too much. Remove apples from microwave. Let stand 1 min before serving.
