2 lbs ground round (very lean)
2 cups bread crumbs dry
2 eggs
½ cup minced onion
2 Tsp fresh chopped parsley
2 tsp salt
1 cup barbecue sauce
1 ½ (16oz) jar pineapple preserves
- preheat oven to 350 degrees F
- In a medium size mixing bowl, mix barbecue sauce and pineapple preserves.
- In a medium size bowl, combine meat, breadcrumbs, eggs, onions, salt and parsley. Mix well and form bite size balls. Arrange meat balls in a single layer of 9x13 baking dish. Pour barbecue sauce mixture evenly over meatballs.
- Bake for 30-45 minutes, until meat is cooked.
