Neapolitan Pork Steaks

2 Tbsp olive oil
1 garlic clove, chopped
1 lg. onion sliced
1 14oz. can chopped tomatoes (feel free to use the kind with garlic or basil etc.)
2 tsp yeast extract (I leave this out b/c I don't know what it is)
4 pork loin steaks about 4.5oz (I just use boneless)
1  2 3/4oz black olives (no pits)
2 Tbsp fresh basil shredded
Parmesan cheese to serve

1. Heat oil in large skillet. Add onion and garlic and cook, cook till softened (3-4 mins)

2. Add the tomatoes and yeast extract to skillet and leave to simmer for about 5 mins or until sauce thickens

3. Cook pork steads under broiler for 5 mins on both sides or until meat is golden and cooked through. Set aside and keep warm.

4. Add olives and fresh basil to sauce in skillet and stir to combine.

5. Transfer the steaks to warm serving plates. Top steaks with sauce and sprinkle with parmesan cheese. Serve immediately.
