Cranberry Pork Chops

2 Tbsp. olive oil
4 center cut pork chops
Salt and pepper
1 bag fresh cranberries
1/4 - 1/2 cup white sugar
1/2 tsp. thyme
1/2 cup strong chicken broth

Heat oil in pan until hot. Flavor pork with salt and pepper, and add to oil; cook several minutes on each side, until fully cooked. Remove with slotted spoon or spatula. Pour 2/3 to 3/4 bag of cranberries into pan. Sprinkle with white sugar, adjusting to preference. (1/4 cup sugar is still pretty tart.) Add thyme and broth, and bring to a boil. Return pork to pan, and cook until cranberries are soft (I try mashing a few.) and pork is heated through.
