***You won’t use the entire rub but it stores well for several weeks if in a tightly sealed container. It’s great on all types of meat.
Zest of 1 lemon
3 Tbs. minced garlic
3 Tbs. fresh rosemary leaves
2 Tbs. fresh sage leaves
1 Tbs. salt
1 Tbs pepper
4 thick pork chops
Olive oil as needed
- In a food processor, blend the lemon zest and all spices and process until the consistency of wet sand.
- Heat oven to 400. Rub both sides of each pork chop with about 1 teaspoon of the spice mix.
- In large skillet, heat a splash of olive oil. Add the pork chops. Sear them on both sides until they are golden brown(about 2 minutes on each side)
- Transfer meat to a baking dish and cook uncovered for 10-12 minutes, or until done
