Ingredients:
- 1 1/2 lb. ground beef
- 1 lg. onion, chopped
- 1 can Rotelle (I like with lime juice and cilantro)
- 1/2 cup salsa
- 10 oz. Velveeta, sliced (I use Mild Mexican)
- 2 tsp ground cumin
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 cups crushed tortilla chips
- softened cream cheese
- 8 - 8" flour tortillas
- 2 cups shredded Mexican cheese
Directions:
1. Brown beef and onion in dutch oven.
2. Stir in Rotelle, salsa, Velveeta, cumin, salt, and pepper; cook over low heat, stirring constantly until cheese melts; set aside.
3. Place crushed tortilla chips in a greased 13X9 pan. Spoon 2/3 beef mixture over chips.
4. Spread cream cheese on one side of flour tortilla and sprinkle with cheese. Fold tortillas in half, and arrange on top of beef mixture. Spoon remaining beef on top of tortillas.
5. Bake at 350 degrees for 20 minutes. Put remainder of cheese on top and bake additional 5 minutes.
