Carrot Soufflé

1lb carrots (cut or baby)
 Steam
Pour into blender
Add the following:
    3 eggs
    3/4 cup sugar
    1 stick melted butter/margarine
    1 tsp. baking powder
    Dash cinnamon 
 Puree and pour into greased casserole dish

To make topping:
     1/4 cup Matzoh Meal
    3 tbs. brown sugar
    2 tbs. Melted butter/margarine

Sprinkle on top of carrot mix
Bake @ 350 for 40-45 mins.
