Spanakorizo (Greek spinach & rice)

Ingredients:
· 1/3 cup olive oil 
· 2 medium onions, chopped 
· 2 pounds fresh spinach rinsed and stemmed or 3 10oz packages of frozen spinach thawed
· 1 (8 ounce) can tomato sauce (you can also use the equivalent of fresh chopped tomatoes) 
· 2 cups water (you can also use chicken broth)
· 5 sprigs of chopped fresh dill
· Salt and pepper to taste 
· 1/2 cup uncooked white rice 
· Fresh Lemon

Directions:
  Heat olive oil in a skillet or medium pot over medium-high heat. Sauté onions in the oil until soft and translucent. Add spinach, stir for a few minutes, then pour in the tomato sauce and water. Bring to a boil, and season with, dill, salt and pepper. Stir in rice, reduce heat to low, and simmer uncovered for 20 to 25 minutes, or until rice is tender. Add more water if necessary.  Squeeze fresh lemon juice on top and serve.  This goes very well with feta cheese on the side.
