- 1lb fresh asparagus
- 1/3 C. low-fat margarine
- 2t. lemon juice
- 1t. fresh dill, finely minced
- 1/4t. salt
- 1/4t. pepper
- nonfat cooking spray
Clean the asparagus and cut off the woody end pieces, if necessary, to fit inside the grill. Pat dry. In a small serving bowl, combine the margarine, lemon juice and dill. Lightly coat the grill with cooking spray and preheat for 5 minutes. Place asparagus side-by-side in the grill lengthwise (vertically) and lightly salt and pepper. Cook for 3-4 minutes or until tender-crisp. Place on a warmed serving platter. To serve, place a tablespoon of the lemon butter on each serving. (I brushed lemon butter on the asparagus as it was cooking and then put the dripping on top of the finished asparagus)
