Cream of Asparagus Soup

2 cups of asparagus cut into 1-2 inch pieces (I sometimes use more- LOVE asparagus)
2-3 potatoes peeled and sliced thin
1 large white onion
2 cloves garlic (optional)
2-3 tbsp flour
1 cup of sour cream
2 cups milk
Salt, pepper, paprika (to taste)
2 cups of shredded cheddar- I often use different kinds to mix it up- cheddar, Monterey jack, mozzerella
2 small tomatoes diced (I sometimes avoid this, I like it better without)

Dice onions and sauté with olive oil in pot (garlic if desired)
When onions are golden- coat with 2-3 tbsp of flour
Pour in milk and add seasonings to taste
Add asparagus and bring to boil - then let simmer for 10 mins.
Add sour cream, tomato and cheese, warm until all is melted/blended

And you can easily make this broccoli cheddar soup- just don't use tomato, or potato.  I cut up broccoli and steam it- then I mash with a fork what I can for some chunky pieces, the rest goes into the food processor.
