Bourbon and Brown Sugar Flank Steak

1/4 cup packed dark brown sugar
1/4 cup minced green onions
1/4 cup bourbon* 
1/4 cup low sodium soy sauce
1/4 Dijon mustard
1/2 tsp pepper
1/4 tsp Worcestershire sauce
1 2-lb flank steak, trimmed
cooking spray
1/2 tsp cornstarch

1. combine first 7 ingredients in a large zip-top
plastic bag; add steak.  Seal and marinate in
refrigerator overnight (if you don’t have that kind of
time, anything over an hour is fine), turning bag
occasionally.  Remove steak from bag, reserving
marinade.

2. Prepare grill pan (can be cooked in regular skillet
as well).  Place steak on pan coated with cooking
spray, grill 5 mins. on each side or until desired
degree of doneness. Let stand 10 mins. Cut diagonally
across grain into thin slices.

3.  Combine reserved marinade and cornstarch in a
saucepan.  Bring to a boil, cook 1 min, stirring
constantly. Serve over steak and mashed potatoes (see
below)

This is great served with mashed red potatoes or any
kind of mashed potato.

*even though bourbon is in the title of the recipe, I
have omitted it and it still came out great.
