1/4 stick unsalted butter 1/4 C chopped shallots
1 tsp brown sugar 1 C low-salt chicken broth
1/2 C beef broth 1/2 C cognac
1/4 C whipping cream 2 beef steaks
1- Melt 1 tbsp butter in heavy medium sauce pan over medium heat/ Add
shallots and sauté for 4 min.
2- Add brown sugar; stir 1 minute
3- Add chicken broth, beef broth, and Cognac. Simmer until sauce is reduced
to half cup. About 20 minutes. Add cream. (this can be made a day in
advance, cover and chill.)
4- Sprinkle steaks with S & P. Melt 1tbsp butter in heavy skilled over
med-high heat.
5- Add steaks; cook 4 minutes per side for rare.
6- Transfer steaks to platter, add sauce to skillet, bring to a boil,
scraping up brown bits. Season with salt and pepper.
