Lishie's EggBeater-Non-Sausage-"De"Muffin

1 TSP butter or Margarine
1/2 cup egg beaters
1 slice reduced fat American or Cheddar cheese
1 tsp. olive oil
1 & 1/2 Morningstar Farms "sausage" patties (to fit muffin)
1 Whole Wheat English Muffin
salt/pepper to taste

Toast the English Muffin... In a small pan heat up olive oil and place the sausage patties in... turn patties over when sizzling a little. In a separate non-stick skillet, scramble the Eggbeaters in a little butter or margarine. Sprinkle w/ salt and pepper to taste. While still hot, place Eggbeaters on one half of the English muffin, quickly topping w/ slice of cheese, then 1 and 1/2 patties, followed by second half of muffin. YUM!
