Southwest Chicken

1 pkg boneless, skinless chicken breasts I prefer to just filet regular cutlets, but you can use the thin sliced ones)
1 red pepper diced
choice of shredded cheese (I like the pepper jack)
1. Preheat oven at 350 degrees. Prepare chicken - either wash and filet or wash and pat dry. Put in baking dish ( I use the pyrex stuff)
2. Put diced peppers on top of chicken and cover with desired amount of shredded cheese.

3. Bake on 350 degrees for 1/2 hour or until cheese gets lightly browned.
