Really Simple Chicken Francese

Ingredients:
1 ¾ sticks of butter
1 tsp cornstarch
½ cup lemon juice
¼ cup Parmesan cheese
1 cup all-purpose flour
4 eggs, beaten
1 pound skinless, boneless chicken breasts
(I found this recipe works for up to seven thin sliced chicken breasts)

Directions:
1. Coat chicken w/flour, then egg beat, sauté in large skillet with olive oil until cooked through. Drain on paper towel
2. In medium saucepan bring butter to boil. Add lemon juice, cheese, and cornstarch. Stir until a thick consistency.
3. Put chicken back in large skillet, cover chicken in sauce, put on medium heat. Bring to a boil in pan. Lower heat and cover with a lid, heat for 5 minutes or until desired temperature.
