Serves 6
I like to use red or yellow bell peppers since they really add color but any color bell pepper works
3 cups beef broth
1 1/1 cups uncooked orzo
1 can corn, undrained
1 can chopped green chilies, undrained
1 lb ground beef
1 medium ground pepper
¼ cup chopped fresh cilantro
- Mix broth, orzo, corn and chilies in medium pan. Heat to boiling and then reduce heat. Simmer, covered for 10 minutes or until orzo is tender. Remove from heat and let stand for about 5 minutes or until all liquid is absorbed.
- While pasta is cooking, cook ground beef and peppers in a large skillet until beef is browned and the peppers are cooked. Drain fat. Stir beef mixture into cooked orzo. Stir in cilantro and serve
