This is my mom's recipe, and one of our favorites. My brother requests it for his birthday every year.
1 tbsp. flour
1/2 tsp salt
1 lb beef tenderloin or London broil, thinly sliced
2 tbsp butter
1 cup thinly sliced mushrooms
1/2 cup chopped onion
1 clove garlic, minced
Sauce:
2 tbsp butter
3 tbsp flour
1 tbsp tomato paste
1 1/4 cup beef broth
1 cup sour cream
2 tbsp cooking sherry
Dredge meat in 1 tbsp flour and salt. Melt 2 tbsp butter in skillet and brown the meat. Add mushrooms, onion and garlic. Cook 3-4 minutes, until onion is barely tender. Remove from skillet.
Over medium heat, put 2 tbsp butter in the skillet - blend in flour. Add tomato paste. Slowly stir in broth - turn heat to medium high and stir until thickens. Add meat to the sauce and heat through. Add sour cream and sherry and remove from heat.
Serve over egg noodles.
