4 large eggs
3/4 cup EACH ketchup, BBQ sauce and minced onion
1/2 cup water
1/4 cup sweet pickle relish
2 tbsp EACH Dijon mustard and minced garlic
2 tsp salt 1 tsp pepper
2 cups bread crumbs
8 oz of crumbled cheddar cheese
12 slices bacon cut 1/4 in wide strips
5 lb lean ground beef
-lightly beat eggs with a fork in large bowl
-stir in ketchup, BBQ sauce, onion, water, relish, mustard, garlic, salt and pepper- until blended
-then bread crumbs, cheese crumbles and bacon
-add beef and mix thoroughly with hands
-with 1 cup meat mixture- form a loaf and place on baking pan- as many as will fit.
The magazine does suggest freezing some loaves for up to 3 months- wrapped WELL in foil
-heat oven to 425 bake 20-25 mins., until meat is browned.
