Makes 1 ½ dozen
- 1 egg white
- 1/2 cup sugar
- 1/4 tsp. vanilla
- dash of salt
- 1/2 cup toasted coconut
- 1/2 cup large-flake regular oats
- 1 cup cornflakes
Heat oven to 350 degrees. Grease pan or use parchment paper (silpats work well). Beat the egg white until stiff. Stir in sugar, vanilla and salt and beat for a few more seconds. Combine coconut, oats and cornflakes. Mix dry and wet ingredients together. Drop by the teaspoonful onto the cookie sheets 2 inches apart. Bake for 10 min or lightly browned.
