Bark Cookies

  • Unsalted saltine crackers
  • 1 ¾ cups of butter (not margarine)
  • 1 cup sugar
  • 12oz. mini chocolate chips
  • 12 oz. package of Heath Bar crunch (in baking aisle)

Heat oven to 400. Line a cookie sheet with foil. Spray a little Pam on foil. Place as many saltines on the foil as you can in a single layer.

Melt butter and sugar in a pot. Bring to a slow boil. Pour over crackers and bake for 8-10 minutes. Watch closely that the edges don’t get brown. Remove from oven and sprinkle chocolate chips, place in oven for another minute. Spread chocolate with spatula over crackers. Sprinkle with Heath Bar Crunch on top. Refrigerate. When cool and firm, peel off foil, and break apart.
