- 1 yellow onion sliced
- 2 cloves garlic minced
- 2 tablespoons olive oil (plus a little extra)
- 2-3 potatoes (I prefer Yukon Gold) sliced (1/4 inch thick)
- 2-3 tomatoes sliced (1/4 inch thick)
- 1-2 zucchini sliced (1/4 inch thick)
- fresh thyme
- coarse salt
- fresh ground pepper
- Gruyere cheese grated
Sauté sliced onions with garlic in olive oil until translucent (about 5-8 minutes). Be careful not to burn the garlic. Transfer onions and remaining oil and garlic to a casserole dish. Decoratively arrange sliced potatoes, tomatoes and zucchini in one layer (slightly overlapping) in casserole dish. Drizzle a little olive oil on top and salt, pepper and thyme to taste. Bake covered at 350 for 45 minutes. Top with grated gruyere and return to oven, uncovered for about 20 minutes or until cheese is browning and bubbling.
