Swedish Meatballs (

2 slices bread
¼ cup milk
3 tbsp butter
½ cup chopped onion
1 tsp salt
1 ½ lbs. ground beef (can do 50/50 with turkey, but I recommend not doing all turkey. The meatballs get too mushy and fall apart)
2 egg yolks
½ tsp black pepper
¼ tsp allspice
¼ tsp nutmeg
¼ cup flour
3 cups beef broth (I like to use College Inn French Onion flavor)
¼ cup cream
1 bag egg noodles

-Boil water and cook egg noodles while preparing meatballs and sauce.
-Tear bread into pieces and place in a bowl w/ milk. Set aside for bread to soak up milk.
-Melt 1 tbsp butter and heat onion until soft. Remove from heat and allow to cool to room temperature.
-Mix bread, ground beef (or beef/turkey), egg yolks, salt, pepper, allspice, nutmeg and onions in a bowl.
-Roll mixture into 1 ounce meatballs
-Melt remaining butter in pan. Cook meatballs until brown on all sides. Remove from pan.
-Add flour to pan to make a roux.
-Add beef stock and whisk until sauce thickens.
-Add cream and cook until desired thickness
-Add meatballs and cook another 1-2 minutes.
-Serve over egg noodles.
