Gourmet Chicken McNuggets

1 lb boneless, skinless chicken breast
2 eggs, beaten
½ cup Italian seasoned breadcrumbs
1 tbsp vegetable oil
1 package mushrooms, sliced
1 can chicken broth
White wine
½ lb sliced Muenster cheese
2 tbsp butter

Cut chicken into 1” pieces.  Soak in egg at least 2
hours (the longer the better).  Dip/coat in
breadcrumbs.  Fry in oil until browned.  Sauté
mushrooms in butter.  Put mushrooms and chicken in
baking pan.  Add equal parts chicken broth and white
wine ¼ to ½ way up the pan.  Top with cheese.  Bake at
350 until bubbly.
