4 large Tilapia Filets
1 Cup Dry White Wine
1 Fresh Roma Tomato Diced OR 1 Small Can Diced Red tomato
1 lg. or 2 small Shallots
A few sprigs of Fresh Parsley
2 Cloves Garlic - minced/crushed
Olive Oil
Salt/Pepper
- In deep fry pan pour in olive oil - enough to coat the bottom of the pan
- Add your shallots & garlic ( you can adjust how much shallot/garlic you use to your taste). Saute - careful not to burn.
- Slowly add Wine & bring your burner down to low/medium
- Add the Parsley, Salt, Pepper
- Add The Tilapia & tomato ( I add the tomato last so that they don't get too mushy)
- Cook for about 5 min. on each side - a little less or more depending on thickness of the fish
This is really a very very simple recipe & your family will think you spent a long time on the Aqua Pazza (or crazy water). Most of my measurements are eyeballed - you can adjust to your taste!
You can subsitute a pound of shrimp for the tilapia and it will also come out great! We serve it w/ brown rice or a vegetable. When making it with shrimp, I add a bit more wine & make angel hair pasta.
