Grandma Shirley’s Chicken

Whole chicken parts (or whatever pieces you like)
1/8 C vegetable oil
¼ C chopped onion
½ clove minced garlic
1/8 t margarine
1/16 t pepper
½ t salt
¼ C dry white wine
Canned mushrooms (broth)
1.5 ounces chopped mushrooms
1 peeled tomatoes, cut (small can)
pinch of parsley

  1. Brown chicken in oil
  2. Add onion, garlic, and margarine
  3. Cook until onion is soft
  4. Season with salt/pepper
  5. Add the wine and mushroom broth
  6. Cook covered for 35 minutes
  7. Add tomatoes, mushrooms and cook 5 min.
  8. Garnish with parsley
Best served over flavored chicken rice
