4-5 teaspoons grated fresh ginger
1 Tablespoon pressed fresh garlic
1 giant onion, diced small
1/2 cup orange juice
1/4 cup honey
1 Tablespoon soy sauce
3 lbs skinless bone-in chicken (can be either dark, light or mixed)
Sauté garlic and ginger lightly in a little vegetable oil. Add onions and sauté till transparent. Mix together orange juice, honey and soy sauce. Add to onions. Simmer 15 minutes. Place chicken in a casserole dish and spoon sauce over chicken. Bake 1 hour at 350.
