Package of boneless chicken breasts
1 package of pre-packages sun-dried tomatoes
olive oil
fresh garlic
basil
1 whole tomato
fresh parmesan
The night before:
Soak sun-dried tomatoes in warm water for 15 minutes, drain and set aside
Wash chicken and pat dry
Cut large slit down the center of chicken breast without cutting through.
Blend 1/2 cup sun-dried tomatoes, 2 tablespoons of olive oil, fresh pressed garlic and a pinch of crushed basil.
Stuff mixture into chicken, wrap tightly with saran wrap and refrigerate.
Next day:
Preheat oven to 375 degrees
Dice whole tomato, add fresh garlic, dash of olive oil, salt & pepper to taste
Wrap chicken in foil packets (take out of saran wrap first) :)
Place on cookie sheet and broil for 10-13 minutes.
Remove from foil packets, spray cookie sheet with cooking spray, put chicken on cookie sheet.
Place tomato mixture on each chicken breast
Bake for 15 minutes
