1 package boneless skinless breast or thighs
1/4 cup extra virgin olive oil
1/4 cup lemon juice
2 tbsp minced garlic or 2 cloves pressed garlic
2 tbsp oregano
1 tbsp basil
salt and pepper to taste
1 onion
1 zuchinni
1 yellow squash
1 pepper
1 mushroom
1 tomato
(all vegetables optional, use what you like!)
Clean and cut chicken into cubes
Whisk together olive oil, garlic, lemon juice, oregano, basil, salt and pepper in a sealble container. Throw in a few slices of onion and chicken pieces. Let marinade for 1/2 hour in the refridgerator. Cut vegetables into large pieces for the kabobs. After the chcken has marinaded, put onto skewers and grill for 7 minutes each side, until chicken is done. (I put mine into my rotisserie for 25 minutes.)
