1 ½ lbs. Chicken breast, pounded flat or chicken scaloppini-style
2 C. Dry stuffing mix
1 C. Water
2 T. Ricotta Cheese
5 T. Butter, melted
2 T. Lemon juice
1 Clove minced garlic
Garlic Salt & Paprika
Preheat oven to 400 degrees.
Combine stuffing mix & water, set aside for 5 minutes.
Lay out chicken and sprinkle with garlic salt & paprika.
Add Ricotta cheese to wet stuffing and mix to bind all together. Spread mixture on chicken and roll each from short end.
Place rolls in baking pan & sprinkle with paprika. Add any extra stuffing.
Combine butter, lemon juice & garlic. Pour over chicken & stuffing.
Bake for 30 mins.
