4 chicken breast halves
salt and ground black pepper
2 tbsp sweet butter
2 tbsp olive oil
7oz Italian mozzarella cheese
4 fresh sage leaves
3 1/2 - 4 oz prosciutto di Parma, preferable thickly sliced
2/3 cup dry white wine
Heat oven to 350 degrees.
cover the chicken breast halves with plastic wrap and lightly flatten them with a meat tenderizer (or your fist)
Uncover, and season all over w/salt and pepper.
Heat butter and olive oil in a skillet.
When foam subsides, slide in the chicken, and sauté until brown.
Turn over and sauté for a further 5-6 minutes. Transfer them to an ovenproof dish.
Slice the mozzarella and lace a quarter of it over each chicken breast.
Put 1 sage leaf on top of the mozzarella and cover with a slice of prosciutto
Pour the wine into the skillet and boil rapidly to reduce by half.
Pour reduced wine over the chicken.
Cover the dish with foil and bake for about 10 minutes or until the mozzarella begins to ooze out.
